Wild asparagus is one of the most prized spring delicacies in Istria. Its slightly bitter taste, rich in minerals and vitamins, inspires numerous culinary creations that selected inns and restaurants across Slovenian Istria will be serving from Friday, March 27, to Sunday, April 12.
24 restaurants – one shared love for local flavours
At the end of March, as many as 24 selected restaurants across Slovenian Istria will be offering creative dishes made with wild asparagus – from traditional recipes such as asparagus fritaja to refined modern interpretations.

Why is wild asparagus so special?
Wild asparagus (Asparagus acutifolius) are wild shoots that grow on sunny slopes among thorny Mediterranean shrubs. Their season lasts from March to early June, and right now is the perfect time to enjoy their full flavour. Traditionally, they are prepared with scrambled eggs, but during the Days of wild asparagus you will be able to taste many other dishes as well: from creamy soups and homemade pasta to asparagus pizza, seafood dishes and refined gourmet plates. All this and much more awaits you in selected restaurants during this year’s event.
